🍁 Easy Thanksgiving Cranberry Orange Muffins
A light, festive treat that doubles as breakfast, dessert, or a grab-and-go snack for guests.
Ingredients
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup fresh or frozen cranberries (roughly chopped)
Zest of 1 orange
¾ cup orange juice
⅓ cup vegetable oil
2 eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F and line a muffin tin with paper cups.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Stir in orange zest and cranberries.
In a separate bowl, mix together orange juice, oil, eggs, and vanilla.
Pour the wet mixture into the dry ingredients and gently fold until just combined—don’t overmix.
Spoon into muffin cups and bake for 18–20 minutes, or until golden and set.
Cool and enjoy! They’re amazing warmed with a little butter.
